~ The Spiral Herb Garden ~





My herb bed is being naturally composted with the falling leaves , but some of my herbs are still growing , the parsley is actually thriving since the weather has been cooler and we've had so much rain.. Earlier today I harvested a basket full of parsley to put in the dehydrator , after drying it , I had 1/2 pint of parsley. I also gathered lemon balm and spearmint to dry for herbal tea.
I found a recipe for herbal flavored butter awhile back in Mother Earth News , so tomorrow I plan to make some herbal butter . Basically you let the butter soften , chop some chives , garlic and parsley , then just blend the chopped herbs into the soften butter and refrigerate. I'll be using the butter on bread and I plan to try some of the butter in grits. How do you use parsley or lemon balm ?

  1. I Love herbs and use them daily.
    I make herb butter and I use lemon&mint herbs for tea making.Parsley is good on pots. also sprinkled over dishes for a prettier display.

  2. My parsley is nice and green still (and there's snow on the ground). I should make some herbal butter sometimes. I have a few recipes but never made it.

  3. Hi Lib ~ I also use parsley in my mashed potatoes to add color and flavor.

    Hi Vickie ~ I guess parsley is a cold weather crop if it's still doing well with snow on the ground. This is this first time I've ever grown parsley , always used store bought. I can't wait to try the butter , so let's get busy and make some.

  4. My parsley is growing beautifully. Will going out to harvest very soon. And will continue with the harvest through the Spring.
    I also use the dehydrator to dry my herbs. From there I will place in plastic bags and store in the freezer.
    I use my herbs in butters, teas, soups, stews, vegetables dishes. They add the flavor that Hubs and I so enjoy.

    I don't have a dehydrator(it's on my Amazon wish list)so I do my herbs the old fashioned hanging method. My Parsley is triving too.
    That herb butter sounds like a winner! :)
