On the first day of spring, I dig my fingers deep into the soft earth.I can feel its energy, and my spirits soar.–Helen Hayes (1900–93)
With Spring begining today , my thoughts have been on wild foods/herbs. I want to try cooking dandelions this year , so I did a goggle search for recipes and this one caught my eye ~ http://southernfood.about.com/od/collardgreens/r/bl30319f.htm , although the dandelions aren't quite ready to harvest in my neck of the woods. I'm looking forward to trying this recipe , very simple and garlic makes everything taste good.

My husband used to make homemade wine and once (only once) he made dandelion wine... man, was it ever sweet. We still make wine but from kits.
Hi Vickie ,
I've always wanted to try dandelion wine , may try to make some this year , if I can harvest enough blooms.
I used 4 cups of sugar in the last few batches of grape wine I made and it wasn't so sweet. The original recipe , called for 6 cups to a gallon. That was to sweet for me.

I'm allergic to dandelions but thats cool that you can use them for something good.
Sounds yummy. I made a dandelion gravy once. I was on a very strict allergy diet and this nice Amish woman helped me duplicate something I had tasted on vacation. I think I'll try to search that recipe down.
Happy Spring!
The recipe sounds delish!
God Bless You and Yours!!!
I love everything about dandelions. I make tea from the flowers and roots and the greens are great in soups or sauteed.
